recipe of the week

I've decided to make 1 new recipe a week. I've tried this in the past and didn't stick to it. Hopefully doing this every week on my blog will motivate me. Please join me in making dinner more than a rotation of the same 4 dishes every week.


Recipe: Whole Oven-Barbecued Chicken
Prep: 10 min total: 1hr 55 min
I made this tonight, it was sooooo tender and juicy.
ingredients:
2 small lemons
1/2 cup barbecue sauce ( I used a honey smoked)
1 tsp. Italian seasoning
2 cloves garlic, peeled
1 whole chicken ( 3lb)
1 pkg. (6oz.) Stove Top Stuffing Mix for Chicken ( I used Stove top for chicken with less sodium)

Preheat oven to 350f. Grate 1/2 tsp.lemon peel; set aside. Cut lemons in half; squeeze juice into small bowl. Set aside lemon halves for later. Add BBQ sauce and seasoning to the lemon juice;mix well. Place Chicken in baking pan. Place 2 of the lemon halves and the garlic cloves inside the cavity of chicken. Rub skin of chicken with remaining 2 lemon halves and discard. Tie legs together with twine.

Bake 1 hour 45min or until chicken is cooked through (165f), brushing with the BBQ sauce mixture every 5 minutes during the last 20min. of baking time. Sprinkle with reserved lemon peel during the last 5 min.

Meanwhile, prepare stuffing mix as directed on package. Place in 1 1/2 qt. baking dish sprayed with cooking spray;cover. Place stuffing in oven during last 30min. of chicken baking time. ( I didn't do all of that, I just made the stuffing like it said on the box and then served it. I forgot to get it made and put into the oven in time. I'm sure it's good baked.)

Remove and discard lemon halves and garlic cloves from chicken cavity. Skim fat from drippings in chicken baking pan;serve drippings with chicken and stuffing.

Serves 6.

Mmmmmmmmmmm, sounds good! I have that magazine somewhere in this house. I think it's somewhere on my scrapbook table. Good of place as any.

Yummy! Just reading your recipe made me hungry. I better go pick up my lunch. I justed picked up 10 recipe boxes from Michaels this past weekend (.50 cents each) what a deal and they are really cute. I plan to make recipe cards and give some out for the Christmas holidays. I will definitely stick this recipe in there. THanks for sharing and I will definitely keep visiting your blog for more recipes.

Mmmm, this sounds delish :D Unfortunately I'm a terrible cook, the only thing I've had in the oven this week is clay lol!
